Pretty Thai® Cold Noodle Peanut Salad
1 bag linguine noodles
8 oz grape tomatoes
1 small cucumber
¼ cup mint
1 green onion
4 toes garlic
1 tsp oil
1 tsp sesame oil
4-6 oz Pretty Thai® Peanut Sauce
sesame seeds (as needed)
crispy wontons (as needed)
Prepare the Ingredients (mise en place):
1). Boil salted water in a medium pot.
2). Wash all vegetables. Small dice the grape tomatoes, mango, & cucumber.
3). Chop the mint and green part of the green onion on a bias. Slice white portion and set aside.
Cook the Noodles:
4) When the water comes to a boil, cook noodles according to package directions. Drain and toss in an ice water bath to cool. After about 5 minutes, drain from ice bath and set noodles aside.
5). In a sauté pan or wok, heat oil on med/high heat. Add garlic and white portion of green onions. Brown and remove from heat.
Plate the Dish:
6). Add noodles, tomatoes, mango, cucumber, mint, the garlic and scallion mixture, sesame oil, and Pretty Thai® Peanut Sauce to a large bowl. Toss together to mix well. Add sesame seeds and crispy wontons. Add the green part of the scallions for garnish and Enjoy!
