Pretty Thai® Chimichurri
1 1/2 shallots
4 toes of garlic
1 1/2 roma tomatoes
1/4 cup Pretty Thai® Lemongrass-Lime Dressing
1 tbsp olive oil
1/4 tsp Pretty Thai® Seasoning Salt
Pretty Thai® Thai Chili Powder; Optional, to taste
1/2 bunch cilantro, stems and all (washed)
1 cup mint (washed)
1). Preheat oven to 425ºF. Coat the shallots, garlic and tomato with half of the seasoning salt and olive oil. Roast in the oven until darkened and caramelized (about 30-35 minutes).
2). In a blender, puree all ingredients together. Enjoy!
