Green Curry Potato Salad

Green Curry Potato Salad

 

For the Green Curry Sauce:

1-2 tsp of Pretty Thai® Green Curry Powder

1 shallot, minced

2 garlic cloves, minced

1 tbsp cilantro stems, minced

1 tsp oil

1 13.5 oz can of coconut milk (not the light version)

2-4 tbsp fish sauce

1 kaffir lime leaf (if available)

 

For the Potato Salad:

1/4-1/2 cup green curry sauce 

2 tbsp spicy brown mustard

1 1/2 lbs red potatoes

Pogue Mahone Bread & Butter pickles (if available), chopped 

1/2 cup Thai basil, chopped

 

Directions:

1). Make the green curry sauce (recipe found here).

2). Mix the remaining ingredients in with the potato salad.  Start with adding 1/4 cup of the green curry sauce to the mixture.  Add more if you desire a more creamy potato salad!

3). Enjoy!
