1 cup quinoa
1 cups water
1/2 cup of Pretty Thai® Lemongrass-Lime Dressing
1/4 cup olive oil
1 cucumber, skin peeled and diced
2 roma omatoes, diced
1 handful mint, finely chopped
1 handful cilantro, finely chopped
2 tsp Pretty Thai® Seasoning Salt
1). Cook quinoa by following directions on package.
2). Cool the quinoa until it is slightly warm. Add in the remaining ingredients and serve immediately or refrigerate to serve later.
