Kale Caesar Salad
1 tsp fish sauce
2 small garlic cloves
2 tbsp Pretty Thai® Lemongrass-Lime Dressing
1 tsp dijon mustard
1/2 cup olive oil
3 tbsp finely grated parmesan
1). Finely mince the garlic with a pinch of salt.
2). Whisk together the first 5 ingredients.
3). Pouring in a very slow, steady stream, whisk in the olive oil to the mixture until the dressing becomes glossy and thick.
4). Whisk in the parmesan and season with salt and pepper. Add more Pretty Thai® Lemongrass-Lime Dressing if you want it more acidic.
5). Pour the dressing over the chopped kale and top with croutons.
