Ingredients

 

Chicken Tacos:

6 chicken thighs, cut into chunks

1 tbsp olive oil

1 tsp Pretty Thai® Green Curry Powder

Pinch of salt

¼ cup Pretty Thai® Sweet Chili Sauce

8-12 corn or flour tortillas

 

Pineapple Salsa:

1 cup diced pineapple

½ cup diced sweet peppers

1/3 cup chopped cilantro

¼ cup minced red onion

4 tbsp lime juice (about 2 limes)

¼ tsp Pretty Thai® Thai Chili Powder

1/8 tsp salt

 

Sour Cream Sauce:

¼ cup Sour Cream

¼ cup Pretty Thai® Tiger Smirk Sauce

 

Additional Toppings:

1 cup shredded cabbage


Directions

STEP 1
Season the chicken with 1 tsp of olive oil, Pretty Thai® Green Curry Powder, and a pinch of salt. Sauté the chicken in a sauté pan with the remaining olive oil. When the chicken has browned and is fully cooked, pour in Pretty Thai® Sweet Chili Sauce. Reduce the sauce down until it fully coats the chicken. Remove from the heat and set aside.

STEP 2
Make the salsa by combing all ingredients. Make the sour cream sauce by combing the sour cream and Pretty Thai® Tiger Smirk Sauce.

STEP 3
Assemble the tacos by first heating the tortillas on a griddle. Spread the sour cream sauce on the bottom of the tortilla then top with the shredded cabbage. Add the chicken and a some of the pineapple salsa. Enjoy!
